Quality Assurance and HACCP systems consider the likelihood of a hazard occurring. Risk assessment and risk management is a structured approach to help quantify these judgements, which companies are under pressure to adopt. However, there is currently little structured guidance to support them. It is well recognised that raw materials are a major source of hazards in the final product. The aim of this project, therefore, is to develop methods for raw material risk assessment for the food industry.
