Specific Aims Include:1. Conduct a critical review of the recent research literature, specific to tomato, that forms much of the basis for current attitudes and expectations for the risk potential and exposure associated with tomato consumption and presumptive events that results in sporadic cases and defined outbreaks. 2. An industry-supported survey of prerequisite food safety programs and degree of voluntary compliance with recommended risk reduction practices will be conducted. 3. Prepare a model multimedia System and Process Flow Diagram for California fresh tomatoes, including small-fruited types. 4. Conduct site visits for repack and minimally-processed tomatoes to validate model Flow Diagram. 5. Conduct targeted product temperature handling affirmation studies between shipping point and retail or processor and retail. 6. Conduct at least three targeted product microbiological fecal indicator growth kinetics evaluations between shipping point and retail or processor and retail. 7. Revise System Flow Diagram and Develop Key Needs Assessment. Develop recommended multi-year, mid-term research questions.
