Microbial food safety is of global concern and a top priority for growers and the food industry. A variety of high risk foods such as fresh produce, poultry, meats and seafood have been associated with foodborne outbreaks. In this project, we intend to use traditional and new food processing technologies to improve the safety of these foods. Results obtained from this project can be used to develop educational and outreach programs.
