The proposed Identification, Assessment, and Delivery of Food Safety Education and Training for Food Service Institutions in the Mississippi Delta is a two year bridge project involving two institutions, the University of Arkansas at Pine Bluff (UAPB) and Tennessee State University (TSU). The objectives of the project are to conduct literature review on training needs for safe food handling; determine the best messages, methods, curricula, and other food safety teaching and training materials for hard to reach audience; conduct workshops to assess adopted teaching materials; and recruit and expend stakeholders/collaborators for future proposal development and submission.
